Meatless Monday. For tonight's dinner I'm making black bean pasta with fresh organic tomatoes, organic broccoli and home made pesto. Delicious gluten-free meal full of protein and vitamins!
For 4 people
Ingredients:
1 pack of Trader Joe's black bean pasta
2 organic tomatoes diced
300 gr organic broccoli florets
Pesto:
2 cups fresh organic basil - from my Tower Garden ;)
1/3 cup cold press olive oil
1 cup pine nuts
5 cloves garlic
1/3 cup nutritional yeast
3/4 teaspoon himalayan salt
1/2 teaspoon fresh black pepper
Instructions:
Cook the pasta following package instructions. Add the broccoli florets and diced tomatoes. For the pesto combine all the ingredients in a food processor until nuts are ground. Pesto should still have texture and not be completely smooth.
